I think one of the reasons that Gameboy emulation is so popular is that the ROMs are small and commonly available on the internet. Also the hardware is commonly available to read and write your own carts for a reasonable sum of money. But let's face it the main reason is POKEMON.
With so many high quality emulators about it is hard to choose one to recommend, so here are the two I usedboy - DOS based, I use it on the kids 486, runs great with almost all colour and original games
REW - Windows based program, really easy to use. I can't fault this program
